Some hints for a Green Wedding:
Have the celebrant create a ceremony with you that has "green values" in it, eg: readings about balance, symbols that create connection between people and their environment, you may want to walk or bike ride to the ceremony location if possible.
Reduce the size of the guest list: Why not invite people that really matter
Choose re-usable: You may think of hiring your wedding dress, or the groomsmen hiring their suits. Or you and your wedding party wearing something you may wear again. Or you may want to make your outfits from natural fibres, such as hemp.
Eco-friendly products: You may want to have recycled paper for invitations. I have married a couple that as a parting wedding gift, gave all their guests home made soap.
Choose local: If you choose a town like Blackwood for your ceremony, the local caterer uses everything organic, and local meats and free range chicken, if you choose to have meat on the menu. All ingredients should come no further than 100km from your reception location.
